Feeling Healthy and Amazing
I am very grateful and enjoying my vegan lifestyle.

Best Breakfast on the Planet!
Organic chocolate banana spinach shake
Ingredients
2 frozen bananas
water and/or chocolate coconut milk
Handful of spinach leaves
Raw organic cacao powder
Raw organic cacao nibs
Place frozen bananas in a blender
Add water and/or chocolate coconut milk
Blend
Add in spinach leaves and blend more
Pour in a glass and add cacao nibs for garnish
This is so awesome

Crispy Potatoes
Side of broiled broccoli π
I love this so much, again I could pretty much live off it!
Preheat oven to 450 degrees
Chop and rinse broccoli
In a broiling pan, add several tablespoons of organic coconut oil and place broccoli in, too.
Cook for about 20 to 25 minutes, turning once halfway through
I cook a lot of my vegetables this way. I just chop them, and broil them with coconut oil on 450 degrees.
You can make them as crispy as you like. After they are done, sprinkle sea salt, pepper, Italian seasoning or any spices you like.
I also like to put a spoonful of spicy hummus on my plate and dip the vegetables in that, and I also add hot sauce. ππππ

Crispy Potatoes
Preheat oven to 450 degrees
Slice baby potatoes in half
Spoon coconut oil in broiling pan (I put a lot)
Place potatoes in pan with coconut oil
Bake for about 30 to 40 minutes, turning once halfway through
sprinkle black pepper, salt and Italian Seasoning
These are so good!

Vegan Pad Thai with a side of broccoli
Prepare rice noodles according to package: I soak for about 10 minutes in hot water, then drain water
In a pan - saute 2-3 cloves garlic in olive oil
In a bowl - mix 4 tbsp soy sauce or tamari
2 tbs organic crunchy peanut butter
3 tbs organic coconut sugar
Siracha to taste - I add a lot because i like it hot
Lime juice from 2 limes
Add olive oil and garlic to the sauce mixture
After draining the noodles, place them back in the pot add the sauce to the noodles and heat through for about 5 minutes
Garnish with chives and crushed peanuts
I could eat this every day!! Love it.

Typical day of food these days...and I feel so amazing and happy!
Breakfast: Organic Mango
I know this doesn't look like a very big breakfast, but it was fine! I eat very slowly and find that when I do, I eat much less.

Lunch: broccoli cooked with coconut oil in oven, then added Italian seasoning, a little salt and pepper
Dinner: More broiled vegetables, this is before I cooked them, Lol! But I put them in the oven on 450 degrees for about half an hour. I put olive oil and coconut oil on before placing in oven.
Also! Soup - I love to make soup.
I start with sauteed onion and garlic in olive oil, then add organic vegetable broth.
Then I add whatever vegetables I have on hand.
This one has red bell pepper, zucchini, kale and I also put lots of turmeric and black pepper.
I also like to add pinto beans. Super good π

Ezekiel bread toasted with vegan butter
Snack
More garden smoothie
Veggie corn dogs with mustard and jalapeΓ±os chopped up
Dinner
Ezekiel toast with vegenaise and vegan cheese
Not the healthiest day but no animals died so I could live today!
I have been stressed out lately and that is all changing because I've changed back to my vegan ways and it makes me so happy. Food affects me.
I look back at my postings from 2013 and see how joyful I was.
Hmmmmmm, vegan food for thought.

What has the primp queen been up to? Food Today :)
Breakfast today:
Green Smoothie - Banana, kale, cacao, stevia, coconut oil and unsweetened chocolate almond milk.
This tastes so good, kind of like a chocolate garden. Lol!
Lunch: Amy's organic lentil soup - so yummy
And a simple salad - all organic lettuce, tomato, red onion and my fave - olives!
I used a little tiny bit of garlic salad dressing I got at Sprouts
Snack: a few flax crackers - Mary's Gone Crackers and guacamole from Sprouts
The rest of my green chocolate smoothie leftover from breakfast.
Hunter thinks he should have some, too!
Dinner: Broccoli cooked in olive oil with garlic and red pepper flakes on the stove, quinoa with chick peas, another salad with lettuce, tomato, olives
Oh and that is vegan cheese mixed in. Dairy free, soy free, gluten free, etc.
It is good, I swear. Well, it depends on what you're used to eating. It may take some getting used to. I just find dairy so revolting so I tried this in an effort to get some cheese flavor without the nastiness of actual cheese.
I am back into my vegan ways for sure. I had some soul searching to do and I honestly do not like the way I feel when I eat meat and dairy. I was going to just add fish to my diet but it tastes like.....fish.
Then I went full SAD (Standard American Diet) and as usual, after a few months I start to feel depressed, moody. Not myself. Not joyful. Kind of achy in my joints.
My skin is no picnic either.
When I eat vegan I feel light. Happy. Sparkly. Shiny!!!
And honestly, I feel like an A**hole when I eat animal products.
Especially reading all books and blogs from my vegan role models.
Not preachin' just sayin'
