Feeling Healthy and Amazing

I am very grateful and enjoying my vegan lifestyle.
I also started a little cookbook for fun. The old fashioned kind you get at the store with the little recipe cards. So cute. And handy when it comes time to fix dinner. 💖

Best Breakfast on the Planet!


Organic chocolate banana spinach shake
 Ingredients

2 frozen bananas
water and/or chocolate coconut milk
Handful of spinach leaves
Raw organic cacao powder
Raw organic cacao nibs

Place frozen bananas in a blender
Add water and/or chocolate coconut milk
Blend
Add in spinach leaves and blend more
Pour in a glass and add cacao nibs for garnish

This is so awesome



Typical Day of Food

Breakfast 

Organic mango 💗




Lunch 💖
Crispy Potatoes

Preheat oven to 450 degrees
Slice baby potatoes in half
Spoon coconut oil in broiling pan (I put a lot)
Place potatoes in pan with coconut oil
Bake for about 30 to 40 minutes, turning once halfway through
sprinkle black pepper, salt and Italian Seasoning
These are so good!

Vegan Pad Thai with a side of broccoli


Prepare rice noodles according to package: I soak for about 10 minutes in hot water, then drain water
In a pan - saute 2-3 cloves garlic in olive oil 
In a bowl - mix 4 tbsp soy sauce or tamari
2 tbs organic crunchy peanut butter
3 tbs organic coconut sugar
Siracha to taste -  I add a lot because i like it hot
Lime juice from 2 limes
Add olive oil and garlic to the sauce mixture 
After draining the noodles, place them back in the pot add the sauce to the noodles and heat through for about 5 minutes
Garnish with chives and crushed peanuts
I could eat this  every day!! Love it.


Side of broiled broccoli 💟
I love this so much, again I could pretty much live off it!

Preheat oven to 450 degrees
Chop and rinse broccoli
In a broiling pan, add several tablespoons of organic coconut oil and place broccoli in, too.
Cook for about 20 to 25 minutes, turning once halfway through
I cook a lot of my vegetables this way. I just chop them, and broil them with coconut oil on 450 degrees.
You can make them as crispy as you like. After they are done, sprinkle sea salt, pepper, Italian seasoning or any spices you like.
I also like to put a spoonful of spicy hummus on my plate and dip the vegetables in that, and I also add hot sauce. 💙💚💛💜
